Slices of juicy pears are mixed with crunchy walnuts, salty parmesan cheese, and peppery salad leaves. Since radicchio is slightly bitter, we topped it with nutty Manchego cheese, sweet pear slices and a honey and Dijon vinaigrette. (Photographed without the pears - oops!) The result was a warm and comforting salad that's right at home next to skirt steak and grilled whole wheat bread. Trim and quarter the radicchio, then dismantle all the leaves.

Steps to make Warm salad: pear, radicchio and chicory - vegetarian:
  1. Preheat oven to 200C.
  2. Put the radicchio / chicory into an oven proof dish. Drizzle the oil over the top and make sure the leaves are coated. Especially the radicchio. Season. Roast for 15-20mins.
  3. For the dressing: mix all the ingredients together in a small dish.
  4. When the radicchio/ chicory is ready, layer on a plate. Add the pear slices. Crumble some cheese if using on top and sprinkle the walnuts on top too.
  5. Drizzle the dressing over everything. Sprinkle some parsley on the top and enjoy ๐Ÿ˜‹
