Niku Udon is Udon noodle soup with beef (Niku=meat), but don't let the name deceive you. It is not just throwing sliced beef into the soup, but there is more to it. The beef topping, to be placed on regular Udon noodle soup, is cooked in sweet and salty seasonings and punched up with ginger.

Instructions to make Beef Udon:
  1. Slice Beef Steaks and Onion thinly, cut Ginger finely into thin strips. Heat Oil in a frying pan and cook Beef, Onion and Ginger until Beef changes colour.
  2. Add Mirin and Soy Sauce, and keep cooking until the sauce thickens and is almost gone.
  3. Cook Udon as instructed, then rinse in cold water to cool. Drain well.
  4. Place cold Udon in a bowl, cover with Beef mixture, sprinkle some chopped Spring Onion, pour 'Mentsuyu' over and enjoy.
  5. *Tips: Sprinkle some Shichimi (Japanese Chilli Powder) for spiciness. Sesame Oil or Roasted Sesame Seeds go well with this dish.

It is not just throwing sliced beef into the soup, but there is more to it.
